80/10/10, Raw Vegan recipe for the famous Tabouli salad who usually contains minced wheat and lots of salt. In this recipe I use cauliflower as wheat, adding pomegranate for extra sweetness, and spice it all up with special tomato, orange, coriander, lemon and spring onions.
Raw Vegan Cauliflower Pomegranate Tabouli |
Ingredients:
0.5-1 Cauliflower head
Seeds of 1 large pomegranate
3 Chopped tomatoes
Cup finely chopped parsley
Cup Finely chopped coriander
6-7 Chopped romaine lettuce leaves
Sauce:
1 Peeled orange
2-3 Tomatoes
1 Spring onion stalk
Hand full coriander
1 Peeled lemon
Directions:
Grind the cauliflower using a food processor to an almost sandy texture.
Place the cauliflower in a bowl and add the pomegranate seeds, chopped tomatoes and greens.
For the sauce blend all sauce ingredients in a blender to a smooth creamy texture.
