Banana Ice Creaminies

April 29, 2013 By ilana 1 Comment

Summer is heading towards us and it’s just about time! I love summer and will take a hot sunny day over a dark gloomy one anytime! Anyway, it’s about time for me to take the special summery recipes out of the pantry and into My Vegan Jukebox.
Banana ice creaminies

What U need:

3 large ripe bananas
1 cup unroasted almonds
1/3 cup unroasted sesame seeds
2 tbsp chia seed (optional)
10 medjool dates
1 cup yellow raisins

How it goes:

Mince the almonds and sesame seeds (and chia seeds if you chose using it) with a food processor.
Make sure the texture is uneven, some of the mixture should stay rough.
Pour the mixture to a bowl.
Mince the bananas with the food processor to a smooth mixture. Add raisins and pitted dates to the banana mixture. Turn on your food processor in pulses few times until the mixture is even.
Add the almond and sesame mixture to the food processor and turn on for few more pulses until the mixture is even.
Cover medium baking pan with plastic wrap. Pour the mixture to the pan and flatten with baking spatula. Cover the baking pan with another layer of plastic wrap and freeze in the freezer for 12 hours.
Just before serving, take the baking pan out of the freezer, take the banana block out of the baking pan and onto a cutting board. Remove plastic wrap. Cut the block to squares and serve.
Save in the freezer until the next time you want to munch 🙂
